BANANA PANCAKES

Banana & coconut make for the quickest wholesome flapjack-style pancakes.

Our pancake/flapjacks are a mix of ripe banana, oatmeal, desiccated coconut, butter, eggs, and coconut milk: a wholesome addition to the traditional recipes these can offer several health benefits due to the extra nutritious ingredients:

  1. Complex Carbohydrates: Oatmeal and banana provide complex carbohydrates, which are a great source of sustained energy. They help stabilise blood sugar levels and keep you feeling full for longer periods.

  2. Fibre: Oatmeal and banana are both rich in dietary fibre, which supports healthy digestion and general gut health.

  3. Vitamins & Minerals: Bananas are a good source of potassium, which plays a crucial role in heart health and maintaining proper muscle function. Oatmeal contains various vitamins and minerals, such as magnesium, phosphorus, and vitamin B-complex.

  4. Healthy Fats: The coconut and butter in the mix provide healthy fats, which are necessary for nutrient absorption and various bodily functions.

Banana & Coconut Pancakes

Basic batch, you can double these amounts.

INGREDIENTS:

2 eggs

1 ripe banana

1/2 cup of oatmeal

1&1/2 teasp of aluminium-free baking powder

1/4 cup desiccated coconut

1/4 cup coconut (drinking) milk

80 gm melted butter (option to replace with 50gm coconut oil)

Optional - sweeten with a drizzle of honey, agave or maple syrup

METHOD:

Using a bowl: Mash banana, add eggs and mix well. Add remaining dry ingredients and coconut milk, mix well. Finally add the melted butter last. mix through.

OPTIONAL: use a blender for a fine pancake mixture.

VEGAN OPTIONS: replace butter with coconut oil and make eggless if needed. if eggs are not included for dietary reasons then simply add an extra banana and when mashing the 2 bananas to begin also include a tablespoon of chia seeds.

To a hot pan add a little butter and large scoops of pancake mixture in batches. turn heat lower as batches cook. flip and repeat.
